It's been one week since...

Ok, sorry for the song title title...When I signed in I realized it had been a week since I posted and suddenly the Barenaked Ladies song "One Week" popped in my head and I started singing it. It has been a CRAZY week and I can't believe tomorrow is Friday again! Ringgold was great! It was nice just to be out of my house for a change of pace. I went to Brennan's soccer game Friday night! And LaFayette won! I think the curse is broken. You see, every time I would go to one of Madison or Landon's football games they would lose! So my family, and I, decided that I apparently was cursed. Well, curse broken! I went to Preston's State Championship Wrestling match and he won!!!! And then, Brennan won! I will put it to the test again soon....well maybe! I am hoping to head up to Williamsburg KY in April to see Mad's spring game. We will see! :)





So, Friday night was the release of Twilight. I have read the books and am a huge fan. Like little girl obsessive fan! Seriously, its pretty sad. But I was going to have a little dignity and just wait till I went to the store on Sunday for groceries to get it. But, I was in Ringgold and Brennan and her friend wanted to go get it. And whats not fun about Walmart at midnight with two 14 year olds? Well, with just two 14 years olds is fun....with 100 of them, not so much fun! So, we get there about 15 minutes before they brought it out, and you could just see packs of young teenage girls hovering where they thought it would be. When the poor Walmart man brought out the display he was basically attacked. Literally, the girls went RUSHING up to him and he just took 3 huge steps backwards and let them attack! He wasnt even able to put the display where it was supposed to go. Bren, Jessica, and myself held back so that the masses could disperse. (I do have a little dignity to save!) I finally calmly walked up to the display and took one of the single copies, then asked politely if there were any special editions left. So, Bren ended up with the single edition and I with the special. We went home and watched it...well, sort of. We were all piled in the bed and I fell asleep about 20 minutes into it! HA! I have watched it since!





This week has been crazy at work. Just busy trying to keep up with everything. Temps start Monday! Yay! I am at home today. Double yay! I looked down just a few moments ago and this is what I saw...





She jumped in her toy basket and was having the best time. I apparently disturbed her!

So I am house hunting again. But just for me! :) My mom and I met my real estate agent last night and looked at a couple. One was a REALLY good deal...but it would need a lot of work that I dont really want to do. We went a few houses down and I fell in love with this cute little house! So me, so perfect, and of course so under contract already! :( UGGG I hate this! I am meeting her again this afternoon to look at a few house. I have another one in mind. But I just hate all the up and down of it all! So wish me luck and say a little prayer for patience!

Anyways, I am headed to Ringgold this weekend! Hanging out with the fam is always fun!

Rainbow and a Recipe

I hate the rain...all I want to do is stay inside and sleep. Unfortunately I didn't get to do that today. I was a good girl and went to church. (I really wanted to take a nap!) And, of course, I was glad I chose church! I love my church! Awesome people, awesome pastor, awesome each week! (Granted there is not much to choose from in the guy department, but thats not what church is for, right? ;) )

I was reminded of a picture I took week before last...

You can barely see it....just to the left of the green light...its a rainbow. You see in everything that is nasty and ugly, there is always God's rainbow. His smile that tells you that everything is going to be alright! While this isnt a good picture of it, the rainbow was beautiful and full! I couldn't help but smile back!


Now for a recipe....

Bruschetta Chicken Pasta

2 Chicken Breast
1 small tomato, cut into small pieces, seeds removed
2-3 tablespoons of pre-made bruschetta
E.V.O.O.
1 Clove Garlic
Angel Hair Pasta
McCormick's Tomato Basil Garlic Seasoning


Cut chicken breast into small strips. (I also like to tenderize mine!) Sprinkle on the McCormicks Tomato Basil Garlic Seasoning. Just enough to your liking. In the meantime, slice your clove of garlic and let it sautee in some E.V.O.O. Throw your chicken in and let it sautee. Remove from heat once cooked thru and set to the side. Also, boil your pasta till cooked. Next pour a little more E.V.O.O. back in your pan, add your cut tomato and 2 tablespoons of bruschetta. Let this simmer until it cooks down and become a little "saucy." Then plate: pasta, tomato/bruschetta sauce, and chicken. I also added some shave Parmesean cheese. Very lite, very yummy! This is a take off of Carrabas dish called: Tagliarini Picchi Pacchiu. This made a double serving for my tiny tummy but is probably about the size of a single serving for most people! So increase your ingredients as you see fit!

Disappointed...

Ugg...I am quite disappointed in my movie choices. I just finished watching Nights in Rodanthe. While it was good, it wasnt great. It wasn't A Walk to Remember or The Notebook. It left me saying "That's It?????" And then I went for funny comedy as well. I love Steve Carrell. Not a fan of The Office but I have enjoyed some of his other work and I was a HUGE fan of the TV show. So naturally I should have loved the movie version of Get Smart right??? WRONG...hated it...half way paid attention to it. Heck, sitting here watching Chloe bark and play with the door stop is more entertaining. How disappointing. Although, my blondie reheated was quite tasty! :)

Spoiling myself....

My parents are out of town this weekend for their anniversary. So sweet, dad planned the whole weekend and has kept mom in the dark! He even went as far as just plugging in the address to the GPS and telling her to follow it! They are in Bryson City, NC today riding the Great Smokey Mountain Train Ride. They will go from there to Asheville and see the Biltmore tomorrow. They are not coming home till Monday afternoon.

So, that leaves me and the girls at home alone all weekend. Last night I decided to spoil myself a little. I went by Applebee's and picked up my favorites and then went by Hollywood Video!


Oh yeah! Riblets, a blondie, and a chick flick! I am totally enjoying my weekend! Hope you all have a lovely but rainy one as well!!!!

My Home Office

As much as I complain, I really do love my job! I have a stable job that is actually thriving right now with this economy. I work for ADP, Inc. Most people know it as that company that does their paychecks. But, we actually have many other divisions. One of those being COBRA/FSA Admin. I specifically work in our COBRA Inbound Accounting Department. COBRA, if you don't already know, is the health benefits continuation program for 18 months after you are terminated from your job. (Whether voluntarily or involuntarily!)


Well one of the perks that I have with my job is that I work from home 2 days a week. This started last summer when the gas prices were soaring, it was something that my manager decided we could do to offset the rising cost! Plus its just nice not to have to go into the office! We can literally do everything from home! My office phone is connected thru my computer and will ring here at the house, I can sign on to our servers and access everything just like I am at the office, and any meetings I can conference call into! It is wonderful!!!! Plus...and this is the BEST part....I roll out of bed and sign on...I work in my pj's!!!

Anyways, I thought I would share the picture of my home office....it is the kitchen table. This was taken today, and it is pretty tame compared to what it normally looks like. And I will have to take a picture of my desk at work....stays messy!

Yes, there are 2 laptops and yes I need them both!!!!

This crazy Georgia weather...

Only in GA is it snowing one Sunday and the very next Sunday it is 78 degrees! Seriously? How is a girl supposed to stay well? I am just getting over a severe sinus infection and bronchitis!

I had a fabulous weekend enjoying the weather. Friday night Erica, Kathleen and I headed to Six Feet Under in the ATL to celebrate Kristin's birthday. Yummy food, tasty beverages, and good friends always makes for a good time! Oh, and they have the most WONDERFUL White Chocolate Banana Bread Pudding!!!! The girls and I totally had dessert BEFORE eating our dinner! Way to be adults! Oh, and if you get the Six Feet Under Lemonade...be careful, you do not taste the burbon and it definetly sneaks up on you!!!

Saturday was a lazy day...literally! I slept till 1:30! Then ended up spending the afternoon working on NSF's for work!

Sunday was very relaxed, I had Waumba Land and then church. After church I went grocery shopping.

Monday I worked from home. Usually I wake up around 7:30 or 8 stroll down the stairs in my pj's and log in to work. Chloe apparently had other plans. She did not wake me up when she had to potty and decided to tinkle in the bed. Rolling over and having your knee land in a wet spot will wake you up really fast! Needless to say, I worked almost 11 1/2 hours yesterday!

Today was just another day in the office...scrambling with the what could happen if's of our payment. I just love that they gave us no time to prepare our systems for the stimulus package!

Chloe is just like any other girl....except she is a dog...

The newest addition to our household came on New Years Day. Mom and I adopted a 3 1/2 week old Shih Tzu puppy! Yes, thats a little early to get a puppy but her mothers milk had dried and the owner was having to bottle feed 6 puppies! Needless to say, "Don's Gal Chloe" came to live in the Dorsey house! She has attached herself to me, which upsets me a little because she was mom's choice. Anways, she sleeps in my room....which I think she thinks is her room now! But, yesterday morning as I was getting ready and she was playing on the bed, she noticed something in the mirror...herself. Apparently she did not like what she saw...

Joining the blogging world...

I am finally joining the blogging community! I thought there was no point to ME having a blog but what can I say, I gave into another fad! Cooking, and especially baking, is something that I LOVE doing! It is a stress reliever to me so I plan to share my recipes....some of them at least! And of course I will vent on those things that come to my random mind!



Here are today's recipes for you:

Mexican Casserole: (This is dinner tonight! One I made up! Yum Yum!!!)
1 lb. Chicken, boiled and shredded, seasoned/simmered in Taco Seasoning packet
1 Package Mahatma Spanish Rice, cooked as directed on package
1 can Rotel, drained
1 can olives, sliced
1 can black beans, drained
Shredded Cheese

Layer your ingreidients as follows:
1. Rice
2. Black Beans
3. Thin layer of shredded cheese
4. Chicken
5. Rotel
6. Olives
7. Lots o' Cheese!
Finally, broil in the oven till the cheese is nice a bubbly!

I serve this with tortilla chips, salsa, guacomole, and sour cream.

And a desert for you....

Snickerdoodle Cookies:

1 cup soft shortening
1 1/2 cup granulated sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoons salt

Combine shortening, sugar and eggs. Sift together and stir in flour, cream of tartar, baking soda and salt. Preheat oven to 400 degrees. Roll dough into balls the size of small walnuts. Roll into mixture of 2 tablespoons of sugar and 2 tablespoons of cinnamon. Place about 2 inches apart on greased cookie sheet. Place in preheated oven for about 8-10 minutes or until golden brown and "cracked" on top.

2 things to notate here.....I ALWAYS ALWAYS ALWAYS use White Lilly All Purpose Flour. There is no substitute!!!! And you will NEVER NEVER NEVER get my pound cake recipe!!! Sorry I have to keep some secrets!
